Sausage Kale and Potato Soup by

I actually added another 4 c. of vegetable stock to this because it looked like it needed more broth to me (and I ran out of chicken stock). It was tasty!!!

Ingredients

2 T. olive oil
2 yellow onion chopped
4 cloves garlic chopped
2 lb. Italian ground sausage
2 head kale rinsed and chopped (Organic if you can get it)
4 medium potatoes cubed
8 c. low sodium chicken broth (I like Organic from Aldi)
1 t. red pepper flakes
dried oregano
salt and pepper
grated Parmesan cheese for garnish

Instructions

Saute onion in oil for 1 to 2 minutes or until translucent. Then add garlic for about 30 seconds. Brown sausage in the same pan. Add chopped kale and cover. Once kale is wilted, add potatoes and stir around until coated with oil. Drain any excess grease, then add chicken stock. Bring to a boil and simmer until potatoes are tender. Season to taste and serve with fresh grated Parmesan.
