Hamburger Soup by
This is a quick & simple, inexpensive recipe and it's delicious!
Originally given to me by my mother-in-law Joy, it's remained a favorite throughout the years. Warm & cozy. The recipe can be tweaked and modified according to what is available in the refrigerator!
-1 lb ground beef (or ground turkey or vegetarian meat substitute)
-1 lb can tomatoes
-1 package frozen green beans
-1 chopped onion
-1/4 cup chopped celery
-3 carrots cut into pieces
-2 diced potatoes (I use red potatoes)
-3 cups water
-3 cubes beef or vegetarian bouillon
-1 1/2 tsp salt
-1/4 tsp pepper
-1/4 tsp oregano
Brown hamburger, drain fat, add all ingredients except green beans. Bring to a boil and simmer 15 minutes. Add green beans and simmer for 15 more minutes. If desired shake Parmesan cheese on top when served.
