Elote Inspired Chicken Salad by

Ingredients

16 oz canned chicken or rotisserie chicken

1 cup roasted corn or canned

1/2 red onion, diced

1/2 handful cilantro, chopped

1/2 cup crumbled Cotija cheese


FOR THE SAUCE

1/3 cup sour cream

1/2 cup nonfat plain greek yogurt

Juice of 1 large lime

2 tsp elote seasoning (or fajita)

2 tbsp fresh chives, chopped

Instructions

1. To a large bowl, add the chicken, corn, chopped red onion, chopped cilantro, and cotija cheese.

2. In a smaller bowl, add all the sauce ingredients and mix well. Give it a taste and add more lime juice or elote seasoning as necessary.

3. Add the sauce to the chicken mixture and mix well. Serve immediately with tortilla chips, or eat it as is!

*store in an airtight container in the fridge for up to 4 days.
