Apple Dressing Stuffed Pork Rolls by

Ingredients

1 c. chopped apple
3/4 c. chopped onion
1 garlic clove, minced
1/4 c. chopped mushrooms
4 tbsp. butter
1 c. bread cubes
1 tsp. poultry seasoning
1/8 tsp. cinnamon
1/8 tsp. ginger
Pinch of nutmeg
1/4 tsp. salt
1/4 tsp. pepper
1 tsp. Dijon
4 pork chops, deboned & butterflied, pound to 1/4” thin

Instructions

Preheat oven to 350 F.
Heat 2 tbsp. butter over med. high heat in fry pan. Add apples, onions, garlic & mushrooms. Cook till apples are tender. Remove from heat. Mix in bread and seasonings and half the salt & pepper. Set aside to cool.
Season pork on both sides with salt & pepper. Spread mustard lightly over each piece of pork. Spread apple dressing mixture on to each piece of pork leaving 1/2” border. Fold side edges over towards center. Roll up end to form roll. Secure with toothpick if needed and set seam side down.
Heat 2 tbsp. butter in fry pan over med. high. Brown pork rolls on all sides. Place in oven. Bake 40 min. Remove from oven. Place rolls on resting plate. Let rest 15 min. before slicing or serve whole.
Deglaze pan and make graving if desired.
