Freekeh with chicken by


2 cups Freekeh (the coarse one for main dishes, it's made out of green wheat, can be found in Middle Eastern stores)
2 lb chicken pieces with bon, I usually use a whole chicken and cut it into 8 precise ,
1 medium onion finely chopped for the Freekeh, 1 medium onion chopped to cook the meat
3 tablespoons olive oil for cooking the Freekeh, 1 tablespoon vegetable oil for cooking the chicken
1 teaspoon salt
1/4 teaspoon cinnamon
1/2 teaspoon black pepper
1/2 teaspoon allspic
1/4 cup fresh lemon juice
2 tablespoons of cooking almonds peeled and separated in half
2 tablespoons of pine nuts


Prepear the the chicken,
Mix the lemon with some salt olive oil , place in the mix the chicken marinate it and place it on the side, meanwhile , Wash the Freekeh well and straight it
Using a pot add 1 tablespoon of vegetable oil with 1 finely chopped onion pot. Saute untill it slightly get bronze in color, add the chicken in the pot and saute it with the onion add half the amount of the spices cook for 10 minutes, then add 6 cups of water, let it boil then lower the temperature and let it cook for 1 hour or till the chicken is fully cooked. Remove he chicken from the pot place it on a baking sheep, bush the chicken with 1 tabsp fresh lemon juice, olive oil and, 1/2 tsp babrika place the sheet in the oven bake on 400F for 15 minute meanwhile, Strain the chicken broth it should give you about 4 cups , we going to use the broth for cooking the Freekeh.
Preparing the Freekeh:
In a large cooking pot add 1 medium finely chopped onion Add 3 tablespoons olive oil suate the onion untill it is browns in color, Add the Freekeh with all the rest of the spices and saute all the ingredients for few minutes. Then add the 3 cups of chicken broth and 3 more cups of hot water, stair all the ingredients Add salt to test, cover the pot , cook the freekeh for 20-25 minutes under low to medium temperature.
In a pan, fry the almonds and pine nuts in 2-3 tablespoons of vegetable oil separately.
After the Freekeh is done, place it in a serving plate and arrange the chicken on top, Then decorate with the almonds and pine nuts , you can decorate with bamagrante seads ,you can also sprinkle the top with fresh chopped parsley . Sa7ah
