Amazing Chinese Salad by

Ingredients

2 (3 ounce) packages ramen noodles, crushed (We use vegetable only, "Mr. Noodle")
10 ounces cashew pieces (We use whole cashews)
1 1/2 (16 ounce) packages shredded coleslaw mix (2 packages is too much)
1 bunch green onions(spring), chopped
1/4 cup white sugar
1/2 cup vegetable oil
1/4 cup cider vinegar
2 packages of seasoning mix from the ramen noodles (added to the dressing mix)
1 tablespoon soy sauce

Instructions

In a pre-heated 350 degree F oven (175 degree C), toast the crushed noodles and nuts until golden brown (about 5-10 min.)
In a large bowl, combine the coleslaw, green onions, toasted ramen noodles and cashews
To prepare the dressing, whisk together the sugar, oil, vinegar, soy sauce and the two packages of seasoning mix from the noodle packages
Pour the dressing over the salad, toss and serve
