Tortilla Soup by

Ingredients

Olive Oil
1 large or 2 small onion - chopped
1 garlic clove
1 large red bell pepper - chopped
2 Tbsp Chile powder
2 Tbsp cumin
10-12 cups chicken broth
2 large cans of tomatoes (I use Italian style)
1 Tbsp oregano
3 cups roasted chicken (rotisserie works great)
3 cups corn
2 cans of green chilies
Tortilla chips
cilantro
limes
avocado
grated cheese

Instructions

Saute onions until translucent, add garlic and peppers. Saute until soft.
Add chili powder and cumin, saute for 30 seconds or until fragrant.
Add chicken broth, tomatoes green chilies and corn, simmer for 10 minutes, do not allow to boil.
Serve with tortilla chips, cilanto, cheese lime and avocado.
