Moms Pickled Beets by


2 cups sugar
1 Tablespoon Whole Allspice
1 1/2 Teaspoon salt
3 1/2 cups apple cider vinegar
1 1/2 cups water (mom always used the water she boiled beets in,so do I )
2 sticks cinnamon

This is enough liquid for about 6 pints.Double as needed.


To prepare beets for pickling pull and cut off all but 2 or 3 inches of leaves.(Beets will bleed out all their color if you cut off all of top.)Wash off all dirt,place in a large pot ,cover with water and cook until tender and skins will slip off easily.Remove from heat and drain off hot water.cover with cool water and as soon as they are cool enough to handle, begin slipping off skins and putting into jars.Cut up larger beets and use smaller ones whole.

Boil all ingredients for 15 minutes remove cinnamon sticks. Pour over beets in jars just to top ring.seal and process for 30 minutes.
