Curry butternut squash soup by

Ingredients

Medium butternut squash
Curry powder
Cumin
Onion
Garlic
Mixed veggies
Dumplings
Vegetable stock

Instructions

Bake squash in oven until soft
Sautée chopped onion and minced garlic in coconut oil
Blend butternut squash in good processor until smooth
Add carton of stock and puréed squash to pot
Add in mixed veggies and cook until tender
Make dumplings and add to soup
Cook for 5-7 minutes and serve
