Ingredients

3 cups flour
1 tablespoon instant yeast
1 teaspoon sugar
½ teaspoon salt
¼ cup vegetable oil
1 cup warm water (as needed)
250 grams Akkawi cheese (soaked in water to reduce saltiness)
1 beaten egg (for brushing)
A sprinkle of sesame seeds or Nigella seeds (black seeds) for garnish

Instructions

In a bowl, mix the flour with the yeast, sugar, salt, and oil, then gradually add the warm water and knead until you get a soft dough.
Cover the dough and let it rise for one hour until its size doubles.
Cut the Akkawi cheese into small cubes after soaking it briefly in water to remove excess saltiness.
Roll out the dough on a floured surface and cut it into medium-sized circles.
Place a small amount of cheese inside each circle, then close it in the shape of a semi-circle or triangle, pressing the edges well.
Arrange the pies on a baking tray brushed with oil or lined with parchment paper.
Brush the surface of the pies with the beaten egg and sprinkle a little Nigella seeds or sesame seeds.
Bake them in a preheated oven at 180C for 12–15 minutes until they achieve a golden color.
