Diet-Friendly Foul Mudammas by

Ingredients

2 cups Foul Mudammas (Stewed Fava Beans)
3 cups water
1 teaspoon cumin
2 cloves minced garlic
1 chopped tomato
1 teaspoon olive oil
Juice of half a lemon
A pinch of salt (optional)

Instructions

Soak the dry fava beans in water for 8 hours or overnight.
Wash the fava beans well and place them in a pot over medium heat with enough water to completely cover them.
Add the garlic, chopped tomatoes, and lemon juice.
Cover the pot and leave it on low heat until the fava beans are completely tender (about one hour).
After cooking, add a sprinkle of cumin, salt, and one teaspoon of olive oil, and mash them lightly as desired.
Serve hot with cucumber and tomato slices or alongside whole-wheat bread.
