Vegetable soup by


1 medium onion, chopped
2 ribs celery, sliced
3 medium carrots, sliced
2 cups fresh green beans, ends removed, cut into 2" pieces
2 cups corn kernels
2 tomatoes, chopped
2 cups cabbage, chopped
6 cups vegetable broth
Salt and pepper to taste
2 small zucchini, ends removed, sliced
2 small yellow squash, ends removed, sliced


In large stockpot, combine all ingredients, except zucchini and squash. Bring to boil, then cover and simmer 45 to 60 minutes, until vegetables are tender. Add zucchini and squash and simmer 15 minutes more.
