Homecooked Chicken Pot Pie by

Ingredients

2 discs of my Simple Pie Crust
1 1/2 TBSP olive oil
1/2 yellow onion diced
1 TBSP minced garlic
1 tsp salt
1/4 tsp pepper
1 tsp parsley
1/2 tsp thyme
1/3 cup flour
1 cup chicken broth
1 cup half and half or whole milk
2 1/2 cups diced chicken
3 cups frozen mixed veggies
1 egg beaten for top

Instructions

1. In a large saucepan, heat oil and saute onion until soft. Add garlic and spices cooking for about 2 minutes.

2. Add flour and stir constantly while slowly adding broth. Mix until there are no lumps.

3. Add milk and stir until smoothly combined.

4. Add veggies and cook until broken up and then add chicken and simmer on medium heat until sauce has thickened. (About 8 minutes) Be sure to stir frequently to prevent burning or sticking.

5. Add mixture to prepared pie crust and cover with remaining disc. Pinch edges to seal pie and cut a few slits in the crust to allow venting.

6. Brush with egg wash and bake in a 420 degree oven for 30 minutes or until golden brown. Cool for at least 15 minutes before serving.
