Leah's Crockpot Chicken Cacciatore by


1 & 1/2 lbs boneless, skinless chicken thighs

(NOTE: The second time I made this, I only had chicken breasts on hand and that also tasted great! The vegetarian Morningstar Chikin Strips worked great for vegetarian option)

3-4 garlic cloves, minced

28 oz diced tomatoes

6 oz tomato paste

1/2 red bell pepper, thinly sliced

1/2 green bell pepper, thinly sliced

1 small onion, diced

1 tsp dried oregano

1 tsp dried basil

1 tsp salt

1/2 tsp pepper

1 bay leaf

1/4 cup water

1 package of your favorite pasta, prepared as directed on box

** Note You can use rice, Leah tends to serve this over rice **


1. Start by seasoning chicken well with salt and pepper. Add the rest of ingredients EXCEPT for the pasta. Stir well to combine

2. Cover and set crockpot on LOW for 7 hours or on HIGH for 4 hours.
