Cupboard Bean Soup by

Ingredients

1 lb. mixed beans- rinsed and picked thru
10 cups water
1/2 lb. smoked ham or smoked turkey parts
1 1/2 cups chopped onion
1 tsp. seasoned salt (optional)
1/2 tsp. blk. pepper
1 Tbs. chili powder
1 28 oz. can tomatoes- crushed with hands
2 Tbs. fresh lemon juice

Instructions

Bring beans and water to a boil. Cook 2 minutes. Cover and let stand 1 hour. Add meat and onion. Simmer 2 hours or until beans are tender. Remove meat from pot when falling off the bone.
Add remaining ingredients and cook another hour or until desired consistency.
Remove meat from skin and meat from bones. Chuck the skin and cut up the meat. Add meat to soup and serve.
****Add more water as needed stirring occasionally!!
