Ingredients
One large bowl of mixed vegetables- drumstick, beans, carrot, broad beans, green plantain, radish, chow chow
Coconut milk – 1 cup
Shallots- ½ cup
Mustard seeds- ¼ tsp
Coconut oil – 1 tbsp
Salt- to taste
To grind to paste:
Green chilly -2
Cumin seeds- 1 tsp
Roasted gram (pottu kadalai) – 3 tsp
Instructions
1. Blanch the roughly chopped vegetables.
2. Add coconut milk and the ground paste and mix well.
3. In a pan heat coconut oil. Add mustard seeds, onion and curry leaves.
4. Add this to the vegetables, add salt and cook well.
5. Do not bring it to boil after adding coconut milk. Add all the ingredients keeping it in a low flame.
6. Garnish with coriander leaves.
7. This instant aviyal goes well with rice, adai, chapathi.
