PANEER CURRY by

Paneer is rich in proteins, calcium and sodium.

Ingredients

Paneer cubes– 1cup
Carrot (julienned) – ½ cup
Capsicum (julienned) – ½ cup
Spring onion – 2to3
Tomato (big) – 2
Onion (big) -1
Ginger garlic paste – 2tsp
Red chilly powder – 1tsp
Garam masala – 2tsp
Bay leaf -1
Fennel seeds – ½ tsp
Curd- 2tbsp
Salt- to taste
Coriander leaves- a handful
To roast and grind-:
Coriander seeds – 2tbsp
Curry leaves – 5 to 10
Dried red chilly – 3to4

Instructions

1. Roast and grind the ingredients to a fine powder.
2. In a pan, heat the oil. Add bay leaf, fennel seeds, onion, ginger garlic paste and sautι for some time.
3. Add the julienned carrot, capsicum and spring onion. Close the pan and let it cook.
4. Puree the tomato and add along with it. Simmer for few minutes.
5. Add red chilly powder and garam masala. Add 2tbsp of the roast and ground powder and salt.
6. Finally add paneer cubes and curd. Garnish with coriander leaves.
7. Paneer curry goes well with chapatti, roti and dosa.
