Aarti's Chicken Tikka Masala by

Ingredients

Marinade:
1 C plain yogurt, whisked until smooth
3 T Ginger-Garlic Paste
s/p
1 pound boneless, skinless chicken breast (2) & thighs (3-4)

Sauce:
olive oil
butter
1/3 C Ginger-Garlic Paste
2 serrano peppers
2 T tomato paste
1 t garam masala
2 t paprika
6-8 Roma tomatoes, diced
s/p
1-2 C water
1/2 C heavy cream or half'n'half

Serve w/:
rice or potatoes
Side veggie

Instructions

Marinade:
Mix marinade ingredients
Poke chicken w/ fork
Do this night before or hours ahead of time
Bring chicken to room temp b4 cooking

Sauce:
Wipe off marinade, sear chicken on high heat, take out
Heat olive oil & butter
Add peppers, saute 2-3 min.
Add both pastes & saute 2-3 min.
Add seasonings & saute 1 min.
Add tom, s/p, 1/2-3/4 C. water
Bring to boil then simmer 20 min. (might need to add more water)
Blend sauce, put back in pan w/ chicken & cook down til thickened
Add cream, stir, serve over rice
