Green beans aux shroom by

Ingredients
2-3 cups green beans
1 lg sweet onion
1 Roma tomato
4 cloves garlic
1 cup mushrooms (something flavorful)
1cup chicken stock
1/4 cup flour
1/3 tsp salt
1/2 tsp pepper
1/4 tsp coriander
1/8 tsp cardamom
* for a special zip 1 tsp Tunisian Harissa

chicken stock
1/4 cup
flour
1/3 tsp
salt
1/2 tsp
pepper
1/4 tsp

cardamom
Instructions
Sauté onions in butter or oil. When onions are almost clear add mushrooms, tomato, and garlic. Cook until mushrooms color changes. Add flour and cook until color turns. (Not a roux but just enough to cook the flour) Add stock and spice. Simmer for 1-2 hrs — until liquid thickens to gravy. Add beans and increase heat to medium. Turn off heat at roiling boil. Let stand 10 minutes.
