Zucchini Pancakes by

Ingredients

1 lb. (1 - 2 cups) shredded zucchini
3/4 cup pancake mix
1/2 cup shredded swiss cheese
1/4 cup finely chopped onion
1 egg - beaten
1/2 cup milk
1/4 cup melted butter

Instructions

Combine pancake mix with melted butter, eggs and milk, stir until smooth.
Mix all remaining ingredients and blend well. Mixture will be chunky and thick.
Heat skillet as you would for pancakes. Spray with Pam or add butter or oil before frying.
Spoon about 1/4 cp. Batter onto skillet and cook as you would pancakes (cook till edges are lite brown and then flip and repeat).
Serve with sour cream or garlic butter.
Makes approx. 8-10 pancakes
