Double Trouble (Chocolate Peanut Butter) Cookies by

Ingredients

Cookie:
2 large eggs
1 C. Brown sugar
1 C. Granulated sugar
1 teas. Vanilla extract
1/2 teas. Salt
1 teas. Baking soda
3/4 C. Cocoa powder
1 1/4 C. Peanut butter
3/4 C. Mini Chocolate chips

Sauce and garnish:
1/2 C. Peanut butter
1 tblspn. Chocolate chips
Garnish: roasted salted peanuts, diced.


Instructions

Preheat oven to 350 degrees. In a large bowl, whisk together eggs and sugars, add peanut butter, vanilla, cocoa powder, baking soda, and salt. Once thoroughly mixed, add chocolate chips. The consistency should be pretty thick and workable.

Form small drops or balls of dough and place an inch or two apart on a baking sheet. You should not need to spray the sheet. Flatten dough balls with a dinner fork, vertically then horizontally to make a number sign. Cook for 10 minutes for soft and slightly chewy centers.

Optional garnish is the melted peanut butter and chocolate sauce. I just heated in a small bowl over pot of water on the stove for 3 minutes on medium heat. Lowered temperature and added chocolate chips. Stir consistently and remove from stove when you are ready to drip the sauce over the cookies with a spoon.

Roast some peanuts with salt, or use already roasted peanuts to add a little crunch to this cookie... and it makes them look so pretty!
