ROASTED FINGERLING POTATOES WITH LEMON AND CHILI by

Ingredients

1 pound fingerling potatoes, scrubbed and cut in half
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
Zest of one lemon
1/2 teaspoon red pepper flakes

Instructions

Preheat an oven to 400°F and position an oven rack in the center.

Arrange the potatoes evenly on a rimmed sheet pan lined with parchment paper or a silpat baking mat. Transfer to the oven and bake until golden and tender, about 25 minutes.
2. Remove from the oven, taste, and season with salt and pepper. Toss with lemon zest and red pepper flakes.
