Great served as a dip for fries
Ingredients
Ingredients (1X Batch):
• Mayonnaise: 4 kg
• Grainy Dijon Mustard: 200 g
• Lemon Juice: 150 g
• Salt: 60 g
• Garlic, chopped: 60 g
• Fresh Tarragon, finely chopped: 40 g
(Peel the leaves from the stems)
• Black Pepper, ground: 15 g
Ingredients (2X Batch):
• Mayonnaise: 8 kg
• Grainy Dijon Mustard: 400 g
• Lemon Juice: 300 g
• Salt: 120 g
• Garlic, chopped: 120 g
• Fresh Tarragon, finely chopped: 80 g
(Peel the leaves from the stems)
• Black Pepper, ground: 30 g
Instructions
Method:
1. Combine all ingredients in a stainless steel bowl.
2. Mix well with a wire whisk until fully incorporated.
3. Store refrigerated.
