Ingredients

•1 cup uncooked white long-grain rice
•5 cups Water
•1/2 cup milk
•1/2 tbsp vanilla extract
• 12 tbsp ground cinnamon
• 2/3 cup white sugar
Or less, it will be very sweet.

Instructions

Prepare the Rice Base:
• Rinse the rice under cold water until the water runs clear.
• In a large bowl, combine the rinsed rice with 2 cups of water. Cover and let it soak at room temperature for at least 4 hours or overnight for the best flavor.
2. Blend the Mixture:
• Transfer the soaked rice and its soaking water into a blender.
• Add an additional 1 cup of water to the blender.
• Blend on high speed for about 2-3 minutes until the rice is finely ground.
3. Strain the Liquid:
• Using a fine mesh strainer, cheesecloth, or nut milk bag, strain the blended mixture into a large pitcher or bowl. Discard the rice solids.
4. Add Flavorings:
• Mix in the remaining 2 cups of water, milk, vanilla extract, cinnamon, and sugar. Stir well until the sugar is fully dissolved.
• Taste and adjust the sweetness or cinnamon to your preference.
5. Chill and Serve:
• Refrigerate the horchata for at least 1 hour to allow the flavors to meld and serve chilled over ice.
