Ingredients
-2 ½ cups unbleached all-purpose flour
-1 teaspoon baking powder
-½ teaspoon salt
-1 cup (2 sticks) unsalted butter, softened
-1 cup sugar
-2 large eggs
-2 teaspoons pure vanilla extract
-½ cup multicolor sprinkles
Instructions
1. Preheat oven to 375.
2. Combine flour, baking powder, and salt in medium mixing bowl.
3. Combine butter and sugar in large mixing bowl with electric mixer on medium0 high speed until fluffy, 2-3 minutes.
4. Add the eggs and vanilla and beat until smooth.
5. Stir in the flour mixture until just combined.
6. Place the sprinkles in a small bowl. Scoop up tablespoon of dough and roll between palms to form a ball. Roll the top half of each ball in sprinkles.
7. Place balls, sprinkle side up, on ungreased baking sheet (or parchment paper) with 3 inches between each cookie.
8. Bake until cookies are pale golden around edges but still soft on top, about 10 minutes.
9. Let stand on sheet for 5 minutes then remove to wire rack to cool.
Cookies dough can be places on parchment lined baking sheets, frozen and transferred to zipper lock freezer bag for up to 1 month. Frozen cookie dough may be placed in oven directly from the freezer, add a minute or two extra for baking.
