Ingredients
Note: This recipe is very flexible. Just use any amount of chicken and vegetables, types of vegetables very flexible. Just cover everything with garlic, salt, pepper, and salsa. Tostidos brand works fine.
Recipe Essentials:
-2-3 boneless skinless chicken thighs or breasts
-Salt (Or Garlic-salt and black pepper)
-Garlic pepper
(And optionally add in tbsp or so taco seasoning)
-1 jar salsa
Vegetables you can use (Put them on the same oven sheet pan as the chicken, season the same and with salsa):
-Bell peppers, any color, sliced
-Onion, sliced
-2 tablespoons seasoned olive oil
Optional sides / Mix Ins
-Spanish rice
-Black beans, Pinto, or Refried beans
-corn
-lime wedges / juice
-cilantro
-avocado
-cheese
-sour cream
-hot sauce / cayenne
-lettuce
Instructions
1. Preheat oven to 400˚F.
2. On an oven sheet pan, place the chicken, peppers, and onions onto the baking sheet and drizzle with oil. Sprinkle the taco seasoning evenly over both sides of the chicken. Salt and garlic pepper the peppers and onions, tossing to coat.
3. Top each chicken breast with a generous pour of salsa.
4. Bake in a preheated oven for 25 minutes
5. Rest chicken for 10 minutes, before serving.
