Ingredients
For the sauce
-1 tbsp olive oil
-50 g all purpose flour (optional for thickening)
-1 to 2 chicken breasts or thighs
-3 garlic cloves, minced
-5 sun dried tomatoes, finely chopped
-1/2 tbsp smoked paprika
-1/2 tbsp chili flakes (or less if you don't prefer spice, even less if you're eating this without the bread for some reason, the bread diminishes the spice)
-1/2 tbsp oregano or Italian seasoning
-200 ml chicken or other stock
-200 ml single cream
-salt and pepper
-2 tbsp parmesan cheese, grated
For the rest of the sandwich:
-30 g arugula [Optional]
-4 sun dried tomatoes [optional, there's already s.d. tomato in sauce]
-Fresh basil leaves, about five [would recommend not skipping this one]
-1 tbsp parmesan cheese, grated [optional, it's already in sauce]
-bread, preferably baguette or other pleasant loaf
Instructions
1. Coat the chicken in flour if using, or you can alternatively throw the flour into the sauce later instead to thicken it a little. The chicken doesn't really need flour, I never bothered using it and it's always great!
2. Place a frying pan on medium heat and add in the oil. Add in your chicken breast and fry on each side for 4 minutes or until golden. Then, remove the chicken while you make your sauce.
3. In the same pan, add in your chopped garlic, sun dried tomatoes, paprika, chili flakes, and oregano / Italian seasoning. Fry for a couple of minutes, careful not to burn, then add in your stock and cream. Give everything a mix.
4. Grate in your parmesan. Season with salt and pepper.
5. Place your chicken back into the pan, add on a lid and cook for 5 minutes.
6. Remove the chicken again and set aside. Your sauce should be thick and creamy. If not, it should still taste great! If it's very saucy, leave the lid off and leave it to simmer for another 5 minutes and thicken.
7. Time to assemble the sandwich. Place down all the stuff that you want in your sandwich and chop it up a little bit if you want your sandwich chopped style, which holds the sauce very well. Enjoy! I'm sure you'll get some compliments if you make this for other people, Zoe gave it an A+ at least.
