Ingredients

-1 lb (450g) chicken thighs or breasts
-2-3 stalks of fresh lemongrass, finely minced (look up how to use lemongrass correctly if needed)
-3 cloves garlic, minced
-1 small shallot or 3/4 onion, finely chopped (can sub in onion instead, use slightly less to sub in)
-2 tbsp fish sauce
-1 tbsp soy sauce
-1 tbsp sugar or honey
-1 tbsp cooking oil of choice
-1/2 tsp black pepper
-1 tbsp lime juice (optional but good)

Optional but really good sauce to pair with
-3 tbsp fish sauce
-2 tbsp lime juice (about 1 lime)
-2 tbsp sugar or honey
-1/4 cup water
-1 clove garlic, minced
-1-2 'Thai bird's eye chili peppers' (just throw in some chili flakes)
-1 tbsp rice vinegar (optional for extra tang)

Instructions

1. Combine everything but the chicken in a bowl and mix well
2. Add in the chicken and coat well, marinade for minimum 30 min
3. Cook the chicken, grill it on a BBQ ideally

Serving Suggestion

Serve optionally with crushed up peanuts and green onions on top of a salad of thinly sliced romaine lettuce, cucumbers, and mung bean sprouts, and a side of pickled carrots and radishes (recipe for pickled veggies also found in this collection), dump sauce on top of everything except pickled veggies.
