Soft and Chewy Chocolate Chip Cookies by

Since this is such a big batch you can bake some at the time of mixing, and then freeze the rest for a later time. Just drop the dough on a cookie sheet and place int the freezer, when frozen put them in a freezer bag. When you're ready, add about 5 minutes to the baking time to compensate for the frozen state.

Ingredients

1 1/4 c.Granulated Sugar
1 1/4 c.Brown Sugar
1 1/2 c.Butter or Margarine, Softened
2 tsp.Vanilla
3 Eggs
4 1/4 c.All-Purpose Flour
2 tsp.Baking Soda
1 to 2 (12 oz.) Semisweet Chocolate Chips (2 to 4 c.)

Instructions

Heat oven to 350*. In a large bowl with an electric mixer, beat granulated sugar, brown sugar and butter until light and fluffy. Beat in vanilla and eggs until well blended. Beat in flour, baking soda, and salt. Stir in chocolate chips.

On ungreased cookie sheets, drop the cookie dough by rounded tablespoons about 2 inches apart.

Bake 8 to 10 minutes or until golden brown. Cool 1 minute, remove from cookie sheets to cooling racks.
