LUKE'S Gizzards by

Ingredients

2 pkg. Chicken Gizzards
1 Bundle of fresh Parley
1 large Onion chopped
1 or 2 cloves Garlic
Water
Salt & Pepper to taste
Cooking Oil

Instructions

Clean and wash Gizzards
chop Onion, can leave on the chunky side.
In a big stew pot cover bottom of pot with cooking oil, Onions and Garlic and cook till clear, but still firm.
Add Gizzards, cover with water.
Cover and let simmer till Gizzards are very tender (2 hours or more).
Check often and keep Gizzards covered in water, you may want to add more oil.
When Gizzards are tender add Parsley, Salt and Pepper to your liking, leave lid off and let it cook done.
Serve over rice or eat as is.
