Ingredients

[iain made this. pretty good; would def make again unlike some other
corn bread recipes.

i used fine maizemeal, not the chunkier polenta whichever you use, don't
get confused with white cornflour.

great with chili con carne. works as muffins or as a loaf.

delicious corn bread

20 minutes to bake. one 8 inch pan. 425F oven

[AMERICAN UNITS!!! sorry:]
1 cup yellow corn meal
1 cup unbleached white flour
3 Tbs melted butter
1/4 cup honey
1 cup buttermilk
1 egg
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Instructions



1. beat together egg, buttermilk and honey
2. mix well together all dry ingredients.
3. combine all ingredients, including melted butter, and mix well.
3. spread into buttered 8-inch square pan, and bake.


serve with butter and a chunk of cheddar cheese.
