The hardest part of making this is keeping your family (or you!) from eating it all before you have a chance to roll them into balls!

Ingredients

1 C oatmeal
1/2 C almond butter (peanut butter can be substituted)
1/3 C honey
1 C coconut flakes
1/2 C ground flax seed
1/2 C mini semi-sweet chocolate chips
1 tsp vanilla extract

Instructions

Mix all ingredients well. I find it's easier to take my rings off and mix by hand. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy. Store in an airtight container and keep refrigerated.
