Ingredients

500g potatoes (can use either white, sweet potato or a mixture of both)
100-150g rocket
Lemon juice
Olive Oil

Instructions

Cut the potatoes into chunks a bit smaller than a golfball. Place into a pot of boiling water. Keep at a rolling boil until softened. Strain the potatoes. Dump rocket into the pot and turn the potatoes back on top of the rocket. Let sit for 30 seconds to wilt rocket. Add a drizzle of lemon juice and olive oil. Toss & serve.
