Bender's Tomato Sauce by

Ingredients

3 salad onions
3 granny smith apples
300ml cider vinegar
1.5 tablespoons cloves
1 tablespoon smoked paprika
1 tablespoon crushed ginger
2.8kg tomatoes
250g brown sugar

Instructions

Makes about 1.5L - 2L. Can be stored in fridge for up to a year.

Skin and cut onions into 8ths
Core and cut apples into 8ths
Cut tomatoes into 8ths

Saute onions in a little olive oil in the bottom of a large pot until softened and starting to brown. Add all other ingredients except the sugar. Simmer on low to medium low for 2 hrs, stirring every 30 mins. Add the sugar and cook for a further hour, stirring every 30 mins.

Remove from heat and blitz mixture in a blender that is suitable for hot ingredients (like a stick blender). Pour through a sieve to remove the pulp, pressing firmly to ensure all flavour is squeezed back in with the mixture. Discard pulp (should be about a cup worth) and return sauce to original pot. If extra sweetening is required you can add sugar at this stage. Return to stove until desired thickness is achieved, usually about an hour. Pour into sterlized bottles.
