Easy Pesto Chicken by

Ingredients

3-4 boneless ,skinless chicken breasts ( can be flattened to 1/4 thick )
1 tablespoon olive oil
1 12 inch non-stick skillet ( with lid)
4-8 tablespoons of purchased pesto
shredded mozzarella cheese

Instructions

1. Heat the oil in the skillet over medium heat.
2. Add chicken and cook about 10 minutes or until chicken is not longer pink in center.
3. A few minutes before removing from heat, spoon 1-2 tablespoons of pesto over each piece of chicken and then sprinkle ( liberal amount ) of mozzarella on top of pesto.
4. Cover skillet to melt cheese.
5. When cheese is melted, serve immediately.
