Brie Mashed potatoes by

Ingredients

1 1/2 pounds of Klondike gourmet potatoes
1/3 cup milk or heavy cream
2 tbsp. butter
1/2 salt
1/4 ground pepper ( I don't use pepper)
2-3 oz brie cheese- rind removed, cubed
1 tsp. chopped fresh thyme leaves

Instructions

1. boil potatoes until tender ( approx. 25-30 minutes)
2. drain and mash potatoes. Add milk, butter, salt, pepper, brie and chopped thyme. Blend until smooth.
( option place in casserole dish and place in oven for 10 minutes to brown top.

Makes 4 servings.
