Crispy Garlic Potatoes by

5 large potatoes
1/4 cup butter
1-2 garlic cloves
fresh Rosemary sprigs (to your taste) or 1/2 tsp whole Rosemary (crumbled)
generous pinch of salt
freshly ground black pepper


Preheat oven to 450 degrees. Peel potatoes and thinly slice. Pat dry with paper towels. Place in large bowl. Melt butter in medium sized frying pan. Add garlic, Rosemary, salt and pepper. Saute for about 5 minutes to develop garlic flavour. Pour mixture over potatoes and gently toss until coated. Butter a 10" pie plate or quiche pan. Overlap butter potatoes in pie plate to form 2-3 layers. Drizzle with any remaining butter in bowl. Bake in the center of preheated oven for 30 minutes or until potatoes are cooked and crispy brown on top.
