Lemon Balm Vinaigrette by

Ingredients

¾ cup extra virgin olive oil

3 tbs white wine vinegar

1 clove garlic, made into a paste with a microplane

salt and black pepper

8 large fresh Veggie Box lemon balm leaves

Full share Veggie Box spring mix

Instructions

Combine all ingredients together in a small blender until emulsified.



Store in the fridge until you're ready to use. It will firm up due to the olive oil, so remove it 10 minutes before serving.



Wash, dry, and rough chop your spring mix. Dress with your preferred amount of vinaigrette. Add additional Veggie Box produce that you'd like, such as chopped cucumbers, massaged kale, or thinly sliced asparagus!
