Black Beans & Yellow Rice by

Ingredients

1 (5 oz) pkg saffron rice mix
1 (15 oz) can black beans
1 cup chunky salsa
3 Tbsps lime juice
1 tsp chili powder
½ tsp ground cumin
2 Tbsps chopped fresh cilantro

Instructions

Cook rice according to package directions; keep warm.

Drain beans.

Combine beans, salsa, lime juice, chili powder, and cumin in a saucepan.

Cook over medium heat for 10 minutes or until thick; stirring occasionally. Stir in cilantro.

Serve beans over rice.
