Almond Plum Cake by

1 cup cranberries, chopped
3/4 cup granulated sugar
2 teaspoons orange zest
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon fine salt
1/2 cup vegetable oil
1/2 cup orange juice
2 eggs
1/2 cup almonds, chopped
1/2 cup water
1/2 teaspoon almond extract
3 plums, thinly sliced


Heat oven to 350 degrees. Lightly grease 9-inch spring form pan. In a medium bowl, stir together cranberries, 1/4 cup sugar, and orange zest. In a larger bowl, sift together flour, baking powder, and rest of the sugar. Add oil, orange juice, eggs, water, and almond extract all at once to flour mixture and stir until moistened. Fold in sugared cranberries and nuts. Spoon batter into pan. Arrange plum slices evenly over batter. Bake 45-50 minutes, or until toothpick inserted into center comes out clean.
