Double Chocolate Muffins by



3/4 cup almond meal
1 1/2 tbsp unsweetened cocoa powder
3 tbsp Enjoy Life’s mini chocolate chips
1/4 tsp baking soda
Pinch of salt
3 eggs
3 tbsp coconut oil
(UPDATE: I subbed this for 3 tbsp unsweetened organic apple sauce and found they were much more moist, my new go-to)
3 tbsp pure organic raw honey
1 tsp vanilla extract
Optional: Add 1/2 scoop protein powder


In one bowl combine almond meal, cocoa powder, salt, and baking soda- mix well until smooth
In a separate bowl combine eggs, coconut oil, honey, and vanilla extract- whisk together
Combine the wet and dry ingredients, add in the chocolate chips, and mix well
Pour into sprayed muffin pan (I use silicone muffin tins)
Bake on 350 for 10 minutes, or until a toothpick comes out clean

‘Whipped Cream’ Frosting:


1 can organic coconut milk (full-fat), refrigerated
1/2 tsp organic vanilla extract
Optional: 2 drops liquid vanilla stevia or 1/2 tsp raw honey (or sweetener of choice)
