4 Slices Reduced Fat Bacon or Turkey Bacon
4 Slices Wheat Bread
2 Tbsp Mayonnaise
1 Tbsp Green onion Finely chopped
1 Tsp Water
1/8 tsp Salt
1/8 tsp Black pepper
1 cup baby spinach
1/2 medium avocado cut into 8 thin slices
4 slices fresh tomato


Heat a large nonstick skillet over medium heat; cook bacon, turning occasionally, until crisp, about 5 minutes. Remove to paper towels.
Toast Bread
Meanwhile, mix together mayonnaise, green onion, water, salt and pepper in a small cup.
Lay 2 slices of toast on a work surface, Spread half of the mayonnaise mixture on each. Layer each with half of the spinach, avocado, bacon, and tomato. Top with remaining pieces of toast. Serve immediately.
