Egg White Scramble by
3 egg whites
Handful of mushrooms, onions, and peppers
Desired amount of sriracha mayo
Coconut oil spray (to grease pan)
Crack eggs into a bowl, be sure to fish out egg yolks as much as possible. Grease pan with coconut oil spray. Add vegetables to the pan and allow them to lightly saute. When they start to brown, add egg whites. Cook until eggs are no longer liquid or until they are slightly brown. Remove from pan and top with preferred amount of sriracha mayo and avocado. Enjoy!
