This is my grandmother's recipe for pancakes...they turn out fluffy and delicious every single time! Be sure to use whole milk though...they're not as fluffy with other types of milk.

Ingredients

2 cups flour
5 tsp. baking powder
1 tsp. salt
3 Tbsp. sugar
2 eggs
2 cups whole milk
1/3 cup oil

Instructions

Start warming up your griddle on the stove. If using an electric griddle, I use the 350 setting.

Mix all ingredients together in large mixing bowl until well blended. Pour batter onto hot griddle in 1/2 cup measurements. Cook on one side until all bubbles stop coming up and "popping" and then flip with a spatula to the other side. Flip each pancake only ONE time! Spread butter on top of flipped side while bottom side is cooking for best results.

Serve warm with your choice of syrup.
