Bulgur Cranberry Muffins by

1 cup milk
1 egg or 1/4 cup applesauce
3 tbsp melted margarine
1 1/4 cup all-purpose flour
1/2 cup whole wheat flour
3 tbsp sugar
4 tsp baking powder
1/2 tsp salt
3/4 cup COOKED bulgur wheat
1/2 cup dried cranberries


Preheat oven to 400F. Line 12 muffin cups with paper liners.

Beat egg or applesauce slightly, stir in milk and margarine. Sift together flour, sugar, baking powder and salt. Combine with wet ingredients; add cooked bulgur wheat and cranberries. Stir until moistened.

Fill muffin cups 2/3 full. Bake 15 mins.
