Ingredients
Lisa's Chicken Curry
1-3lb Chicken / "meat"
2 Medium onions
2" Fresh ginger
3 Fresh green chillies
4 Cloves of garlic
1 Tin of tomatoes, chopped
1 tsp Tumeric
1 tsp Chilli powder
1 tsp Garam Masala
1 tsp Coriander
1.5 tsp Ground cumin
3-4 Cardamom seeds
2 Pieces cinnamon stick, each one inch long
4-6 Peppercorns
2-3 tbsp Oil

-3 tbsp Oil
Instructions
Put oil in pan. Add cardamom seeds, broken first, cloves, peppercorns and cinnamon stick.
Heat oil until peppercorns pop. Mine did not pop.
Add onions finely chopped, cook until golden and soft
Then add tomatoes
Then add salt, tumeric, chilli powder, cumin. Also ginger, garlic, chillies, all blended and chopped first.
Cook this for about ten minutes. This makes the masala.
Add chicken or meat, 1 to 3 pounds or equivalent in metric. Stir into masala.
Optional add 3 or 4 potatoes or an aubergine chopped into chunks
Add a little water until chicken is just covered.
Cook simmering until chicken is cooked, recommend at least 30 mins.
Then turn down heat to a slow simmer and garam masala and coriander. Simmer for five minutes more.
Serve with rice etc.
