Breaded Kalathaki From Lemnos With Aegina Pistachios And Sour Cherry Juice by

4 slices of Kalathaki cheese
2 tbsp flour
1 egg (gently beaten with 2 tbsp of water)
100 g Aegina pistachios (coarse)
2 tbsp olive oil
4 tbsp sour cherry juice (or strawberry juice)
1/2tsp thyme


Step 1: Prepare the cheese. Place the flour in a dish, the egg (beaten with water) in a deep dish and the pistachios in another dish. Roll each slice of cheese first in the flour, then in the egg mixture. Finally, roll the cheese in the pistachios. Set the slices of cheese aside.

Step 2: Heat the olive oil in a frying pan. Fry each slice of cheese for approximately 2 minutes on each side.

Step 3: Place the slices of cheese on a platter, pour the sour cherry juice over them, sprinkle with thyme and serve.
