Easy Udon by

1 pkg. Udon Noodles
1/2 Tbs. Vegetable Oil (or EVOO)
1/2 C. Shittake Mushrooms
1 tsp. Minced Garlic
1/4 C. (for saucey consistency) 1/2 C. (for soupier) Veggie or Chicken Stock.

1 tsp. Miso Paste
Firm, Cubed Tofu (add with mushrooms in steps below)


Medium saucepan, on medium heat, cook oil. Add garlic until fragrant, and add mushrooms (and tofu), and cook 3-5 mins. In a bowl, combine stock and flavour packet (and miso), mix until dissolved. Push mushrooms to the side and place Udon in the pan. Cover noodles with stock mix and lid. Let simmer 5-10 mins., or until noodles are separated. Enjoy.
