Cinnamon Sugar Roasted Butternut Squash by
12 oz. medium diced butternut squash
4 Tbsp. butter, melted
1/2 tsp. salt
1/2 tsp. cinnamon
1/8 tsp. ground cardamom
3 Tbsp. brown sugar
Dash of cayenne
1.5 Tbsp. lemon juice
oz. medium diced butternut squash
5 Tbsp. lemon juice
1. Preheat oven to 400 degrees F.
2. Melt butter. Toss squash in butter.
3. In a small bowl, combine salt, cinnamon, ground cardamom, cayenne, and brown sugar and stir to evenly combine ingredients. Toss squash in dry ingredients. Evenly distribute squash in pan.
4. Drizzle the lemon juice over the top of butternut squash. Bake, uncovered until tender, approximately 40 minutes.
