Protein Packed Quinoa-Chickpea Salad by
2 cups multi-colored quinoa, cooked
1 cucumber, chopped
1 pint red and yellow cherry tomatoes, halved
1/2 cup green onion, diced
4 tablespoons fresh parsley, minced
4 tablespoons fresh cilantro, minced
2 tablespoons olive oil
1/2 tablespoon white vinegar
1 tablespoon Dijon mustard
1 tablespoon lime juice
1/2 cup crumbled feta cheese
1 1/2 cans chickpeas, rinsed and drained
salt and pepper, to taste
In a large bowl, add quinoa, chickpeas, cucumber, cherry tomatoes, green onions, and cilantro, and toss to combine.
In a small bowl, whisk together the olive oil, vinegar, lime juice, salt, pepper, and Dijon mustard.
Pour dressing into the quinoa mixture and toss to combine. Top with feta, serve, and enjoy!
